DAVE WALBERT Dave “Wabs” Walbert has spent five decades in Aspen shaping the community through his leadership, service, and generosity as a restaurateur, firefighter and dedicated handson volunteer. Wabs moved to Aspen in 1976 and quickly developed deep community roots through his work in two beloved restaurants, Pablo’s Restaurant, which he owned and operated beginning in 1976, and the Red Onion, which he ran from 1983-2007. When Wabs acquired the lease at the Red Onion, he focused on reviving the glory of the historic bar. By all accounts, he was successful in creating a true community hub, welcoming locals and visitors alike.
Shortly before closing in 2007, Wabs wrote a letter to the editor to show his gratitude for his time running the Onion: “Thank you for trusting that we could help you celebrate an engagement, wedding, anniversary, new baby, graduation, job, family reunion, retirement, and even the loved ones lost. We will never forget the amazed looks of the third graders who came for their Aspen history lesson and poked little fingers in the bullet hole behind the bar or the World War II Vets of the 10th Mountain Division, raising a glass to old memories and comrades. Perhaps you were a tourist in search of a meal, a thirsty rugger, member of the freshman class or an old timer looking to reconnect with the past. Maybe you just came in for a beer after work or meatloaf on Monday. We are happy that you did and can’t thank you enough for your loyalty and support. We have partied, laughed, and cried together and now we truly wish we could name every employee, friend, and customer who has been with us along the way.”
Wabs has been a dedicated volunteer firefighter for 30 years, during which he has served as Captain and Deputy Chief. Wabs continues his service on the Aspen Fire District Board and the Honor Guard, representing Aspen with pride and compassion. He worked alongside the Aspen Science Center to teach a “Science of Fire” camp and educate local kids about fire and firefighting.
As a board member at the Aspen Historical Society, Wabs helps preserve Aspen’s mining heritage through hands-on restoration work. He has spent years refurbishing and maintaining the large collection of 1800’s-era mining equipment at the Marolt Mining Museum.
Wabs also serves on the Board of Seniors Independent and he is known for his kindness and generosity for anyone in need. Whether mentoring youth, supporting seniors, or warmly greeting visitors on the streets and slopes, Wabs embodies the authentic, community-driven spirit that makes Aspen so special.
